Also known as springs or kings, they are the most prized game salmon for sport fishers. Chinook is the largest salmon species, with richly flavored, firm flesh ranging from ivory white to deep red in color. Chinook Salmon are noted for having black gums and small, round spots on the back, dorsal fin and both upper and lower parts of the tail. The flesh has a rich, buttery taste with a more delicate texture than other species due to the high oil content. Rich in omega 3 oils, it is truly the "King" of Salmon.
