Coho (Silver) Salmon - Coho salmon range from 4lbs to 16lbs in size and do not migrate as far as other species of salmon, staying fairly close to shore. The flesh of the Coho is reddish-orange - redder than chum and paler than Chinook or Sockeye.
The skin color of the Coho changes as it approaches fresh water, but the flesh color remains more consistent than other species, particularly chum. Wild Coho Salmon has good oil content and is popular for Baking, Broiling & BBQ.
Most of the Coho Salmon found in grocery stores and fish markets around the country is not Wild but farm raised. There is an obvious difference in the taste & texture of Wild Coho Salmon vs Farm Raised
