Particular attention is paid to the lobster processing. Our Lobster Tails are processed with minimal glazing and do not contain Triglycerides which are used as a preservative in some fisheries.

Rock lobster (without claws) is a known delicacy that is highly prized the world over. Found in warm and cold waters, rock lobster is sold primarily as tails. Warm water rock lobster comes from a variety of sources.

The premier sources for warm water rock lobster are the USA, Brazil & North Australia. Of the various producing areas, these countries maintain the highest quality standards. The USA & North Australian lobster is produced from live animals and the sizing and packaging is to very strict standards.

The Primary Producing area for Cold Water Rock Lobster is West Austrailia. The catch is produced from live animals and the sizing and packaging is to very strict standards. West Australian lobsters are all processed without chemicals.
