The Dungeness Crab gets its common name from the town of Dungeness, Washington, now called Old Town Dungeness, where the first commercial harvesting of the crab was done. The Dungeness Crab is widely considered one of the most favorful crabs on the market. Often eaten from the shell, it is also popular in pasta dishes, crab cocktails, and as a popular option for "Crab Feed" parties and fundraisers.
Live or Fresh Frozen? With many purveyors, the live Dungeness Crab is trucked from the dock to a store or distribution warehouse, and placed in saltwater holding tanks. When an order is placed, they are packed for shipment. Upon arrival at their destination, they must be cooked or placed in another saltwater holding tank until use. When a crab has been in a holding tanks for a few days without feeding, the crab begins to lose edible weight.
At Wild Ocean Seafoods, our Dungeness Crab is trucked directly from the boat to the plant in slush ice chilled seawater. This short trip is all that is needed for the crab to clear itself of it's "last supper" and be ready for processing. Upon arrival, the crab are then processed, cooked and brine frozen immediately.
Brine freezing instead of "blast freezing" preserves our Dungeness Crab from dehydration.
